Kirby is a flat file CMS, doesn't work as a headless solution.

A headless CMS needs to manage your content in such a way that your content can be extracted and used in any manner. This is generally accomplished by the CMS providing an API. Just checked and it turns out that Kirby's recent 3.0 release provides an API for this exact purpose! If someone wants to open a PR to add Kirby, we'll get it merged 👍
